In our last recipe posts, we took you down memory lane to show you some of our favorite Mexican desserts: Arroz Con Leche and Hojarascas. Today, we’re going straight up American…with a twist. You can’t get any more American than apple pie, right?!
This dessert was fun and honestly, a lot easier than I thought it would be! I’ve seen people serve baked apples before and it always looked so fancy and difficult to make. That’s not the case though, these are super simple and an amazing way to get your apple pie fix.
The only thing is that they do take about an hour to bake. So if you’re going to try to make this recipe, make sure to carve out the appropriate amount of time. They are the perfect combination of cinnamon sugar stuffing, apple tart and pie crust deliciousness.
Stuffed Baked Apples
- Five medium sized apples (we would recommend either granny smith or honeycrisp)
- 3/4 cup oats
- 4 tbsp brown sugar
- 1/4 cup flour
- 1 tsp cinnamon
- 1 stick butter, diced
- 1 cup flour
- 4 tbsp water
- 6 tbsp butter, diced
- 1/2 tsp salt
- 1 tbsp brown sugar
- 1 tsp cinnamon
Preheat oven to 400 degrees. Combine all the stuffing ingredients in a bowl. Mix it all together with your fingers, rubbing it into a loose sandy mixture. There will be some moist clumps and that’s okay. Put in the refrigerator to keep chilled while you prepare the rest.
Next, to make the pie crust, combine flour and salt in a medium bowl. Using a fork, mix in the butter until the mixture is in crumbs. Add water and blend until the mixture is dough like. Roll into a ball and set aside.
To carve the apples, slice off the top 1/4 of the apple with a knife. Then, use a spoon to scrape out the core and the flesh inside, leaving the apple in a bowl shape. Be careful not to puncture the bottom or the sides of the apple.
Once the apples are carved, place them on an inch deep cookie sheet and fill them each with the stuffing. Then roll out the pie crust to about 1/4 inch thick and cut into a circle shape that is large enough to over the top of the apple opening. Mix the cinnamon and brown sugar topping and spread over the pie crust.
Fill your cookie sheet with water about 1/2 inch high and place in the oven for 50-60 min.
