What is Pico de Gallo?
Pico de Gallo or “Salsa Fresca” is basically a dip or salsa made from fresh ingredients – usually tomato, onion, jalapeño and some add cilantro. It’s a super delicious dip that goes well with chips, or in tacos or as a topping for your nachos.
Our mom LOVES Pico de Gallo. Whenever she’s craving it, she’ll just whip it up real quick to get her fix. It’s so easy and so appetizing! It is typically made with fresh jalapeños but we thought we’d try it out with pickled jalapeños for this recipe and we were pleasantly surprised! I love pickled jalapeños and the extra flavor from the juices really made this Pico de Gallo recipe pop. We also added some salt and lime to the finished product to top it off.
I always love when restaurants serve Pico de Gallo with their chips and salsa. I feel like not as many restaurants do that here in Texas, maybe because it’s not as much of a TexMex thing? I don’t know. Maybe I just have to ask for it, haha.
With summer time coming up, this is the perfect recipe for your next bbq, pool party or get together! It’s so refreshing and it’s the most delicious thing to munch on. Before you know it, you’ll be eating the whole thing by yourself! Haha.
Pickled Pico De Gallo Recipe
Serves about 4
Ingredients
- 3 medium tomatoes
- 1/2 onion
- 1/2 cup pickled jalapeños (you can use raw, if you don’t want pickled)
- salt to taste
- lime to taste
Instructions
- Chop up your tomatoes, onion and jalapeños and combine.
- Add salt and lime to taste. Mix together and adjust as needed. We put about 1/4 teaspoon of salt and 1/2 lime.
- Mix it all up and enjoy!
