Hey everyone! Thanks for checking out this recipe. Lately, we have been trying to stay consistent with our workouts and lean eating. In my post about My Fitness Journey, I shared how we have found that counting macros has really helped us lose weight while not cutting any food group all the way out. I love it because I feel like the weight loss plans that require you to cut out all of one food group don’t stick for long. They may work for the amount of time that you follow the plan, but once you lose the weight and you go back to eating “normal”, sometimes you gain it back. Counting macros is something you can follow all the time and it actually shows us how we should be eating anyways. To learn more about it, you can check out My Fitness Journey.

In counting our macros, we’ve been eating more protein. I don’t know if you’ve ever thought about it, but most of our “regular American meals” are loaded with carbs and fats. And they have very little protein! So it’s been a little bit of a challenge to find and make meals that have more protein than fats and carbs. That’s why I love this recipe. This easy turkey meatloaf recipe is full of flavor, low in carbs and putting them in muffin form makes it easy to keep track of how much you’ve eaten! They also are packed with protein and only have 2 fats and 3 carbs per muffin! 

Turkey Meatloaf Muffin Recipe

Makes 12 muffins; Calories: 87, Carbs: 3, Fats: 2, Proteins: 13 per muffin

Ingredients

Instructions

  1. Preheat oven to 350 degrees
  2. Spray muffin tin with non-stick cooking spray
  3. Sauté onions in olive oil on a skillet until their browned
  4. Cut off crust from bread and blend in a food processor or blender until it’s just crumbs
  5. In a large bowl, combine all ingredients with ground turkey and mix together with your hands. You can also combine them with a spoon, but I feel like I can mix them all better with my hands.
  6. Scoop out the meat mixture into the muffin tin and disperse evenly.
  7. Bake for 30-35 minutes until fully cooked through.
  8. Remove from oven and enjoy! You can top it with some ketchup or just eat them as is.
